Toasted Marshmallow & Melted Chocolate
Smores Brownies
These heavenly squares have a layer of brownie topped with a layer of smores!
~ Gluten & Dairy Free~
8-12 brownies
Cook time: 25 minutes
Prep time: 15 minutes

Ingredients:
Bottom Brownie Layer:
1 cup white sugar
3/4 cup dairy-free butter*
2 large eggs
1 tsp gluten-free vanilla
1/2 cup unsweetened cocoa
1/2 tsp baking powder
1/2 cup white rice flour
Sprinkle of sea salt
1/4 cup dairy-free chocolate chips

Smores Layer:
1 1/4 cups mini marshmallows
1/2 cup dairy-free chocolate chips
​
1) Preheat oven to 350 degrees. Using parchment paper, line a square 8x8 square baking dish or a loaf pan for thicker brownies.
2) Stir the sugar and dairy-free butter together. Add eggs and vanilla. Then stir in cocoa. Next add baking powder and gluten-free flour, sprinkle of salt, and dairy-free chocolate chips. Stir ingredients together, do not over mix or brownies will become cakey.

3) Pour batter into a greased or lined baking pan. Bake for 10 minutes, remove from the oven and sprinkle 1 1/4 cup of mini marshmallows followed by 1/2 cup of dairy-free chocolate chips. Place back in the oven for 15-18 minutes more. Bake for an additional 5-10 minutes if using a loaf pan.

4) Remove from the oven and let brownies sit in the pan until cool. Cut into 12 even squares.

Tips:
*For vegan butter, I have used Earth Balance and Becel Vegan Butter and they both work great.
Use your favourite gluten-free flour. I have tried Bob Mills 1-to-1 GF Baking Flour as well as brown and white rice flour. They all taste great! Bob's Red Mill 1:1 works well because it has xanthan gum already in it, so the brownies stick together better.
Don't over-stir brownies!
Eggs are important in this recipe.
