Protein Energy Balls
A perfect protein snack for busy families!
This is an easy snack that can be prepared ahead of time.
~ Gluten & Dairy Free ~
Makes 15-20 balls
Ingredients:
1 cup of dry gluten-free rolled oats
2/3 cup unsweetened coconut flakes
1/2 cup dairy-free chocolate chips
1/2 cup ground flax
1 tbsp chia seeds
1/3 cup maple syrup or honey
1/2 cup peanut butter or almond butter
1 tsp vanilla
Optional Addins: 1/3 cup of raisins or
chopped pecans.
​
1) In a large bowl or stand blender, add all ingredients and mix well.
​
2) Form into 1 tbsp balls. Makes 15-20 balls.
​
Store in a covered container in the fridge for up to one week.
​
No baking required.
Tip: Try blending the oats for a smoother texture.
