Pinwheel Egg Wrap
Pinwheel Egg Wraps! 5 ingredients! Ready in 15 minutes! So delicious!
~ Gluten & Dairy Free ~

Ingredients:
1 gluten-free wrap*
2 large eggs
Dairy-free butter (greasing the pan)
Dairy-free cheese (I used Emborg Mozzarella Shreds)
Mayo (I used vegan mayo)

2 slices of gluten-free deli ham (optional)
2 slices of avocado (optional)
​
1) In a bowl, whisk two large eggs, per person.
​
2) Grease a large frying pan with a little dairy-free butter. Pour whisked eggs into the frying pan, cook on medium heat. It is important to use a big enough pan that the eggs are thin. Roll the eggs around the pan. Let the eggs cook then flip, do not scramble.
3) Put mayo on the wrap, along with cheese, ham and avocado. Then roll the egg in the wrap.
4) Use a panini grill or frying pan to grill the wrap.

Tip: I have used LaTortilla Factory Ivory Teff Wraps or Toufayan Bakeries Gluten-Free Tortilla Wraps.
If you are gluten-free, I highly recommend a panini grill. Gluten-free bread and wraps often taste better grilled. It also helps to warm the cheese and sauce.
