Lemon Tahini Avocado Salad
This salad dressing is creamy and delicious!
You won't believe there's no dairy!

4 Servings

Dressing:
1/3 cup olive oil
2 tbsp tahini (ground sesame seeds)
2 tbsp lemon juice
1 tsp gluten-free soy sauce, Tamari, Liquid Aminos or Coconut Aminos
1 tsp pure maple syrup
2 tsp dairy-free parmesan* (optional)
1 head of romaine lettuce, chopped
A sprinkle of vegan parmesan
1-2 avocados, cut into pieces

Put dressing ingredients into a cup blender or use a whisk, mix until creamy. Mix dressing with lettuce, add pieces of avocado and toppings of your choice.

Optional toppings:

1-2 pieces of cooked chicken or meat alternative

2 green onion, chopped

1/2 red pepper, chopped

1/4 cup pumpkin seeds and/or sunflower seeds

garnish with cilantro

gluten-free croutons

Ready in 15 minutes!

Tip: Buy good quality Tahini. Not all brands taste the same. I prefer organic Tahini.

Earth Island Parmesan can sometimes be found at Walmart or at health food stores.

Alternatives to Soy Sauce:
​
Coconut Aminos (Soy-Free Seasoning Sauce) is soy-free, gluten-free, non-GMO, No MSG, and vegan.
​
Liquid Aminos is a natural Soy Sauce Alternative. It is not fermented, gluten-free, and contains no alcohol. It is made of soybean vegetable protein and water. And it does contain sodium.
