Lemon Protein Balls
These little bites have a sweet, nutty, lemon flavour.
This is an easy and nutritious snack idea that can be prepared ahead of time and ready for the week.
~ Gluten & Dairy Free ~
Ingredients:
3/4 cup dates, pitted
3/4 cup roasted or raw almonds (unsalted)
1/3 cup pumpkin seeds (raw, unsalted)
1 tbsp chia seeds
4 tbsp lemon juice
1 tsp gluten-free vanilla

1) In a food processor, add dates (cut each one in half to make sure the pit has been removed), almonds, pumpkin seeds, and chai seeds pulse until well chopped.
​
2) Add lemon and vanilla and pulse until the mixture is smooth and holds together.
​
3) Form into 1 tbsp balls and store in the fridge, in a covered container.
​
No baking required!
Tip: Watch for pits in the dates.
