Kale & Arugula Salad

Delicious salad with a refreshing lemony vinaigrette!

~ Gluten & Dairy Free ~

4 portions

Kale Salad: 

142g (5oz) container of organic baby kale and spinach 

1/2 cups carrots, grated

1/4 red pepper chopped small

1/2 cup gluten-free croutons (optional)

4 tbsp pumpkin seeds and cashews or walnuts

1 avocado sliced

​

Oil Dressing:

1/2 cup olive oil

3 tbsp fresh lemon juice

1 tbsp apple cider vinegar or red wine vinegar

1 tbsp dijon mustard

1/4 tsp honey or maple syrup

Dash salt and pepper

​

Mix and serve!
