Dairy-Free Cheesy Alfredo

Children love this recipe and it is so simple to make!

~ Gluten & Dairy Free ~

4 Servings

​

1 cup of canned coconut milk 

1 tbsp white rice flour

1 tbsp vegan butter

1 tbsp nutritional yeast

1 cup dairy-free mozzarella cheese, grated
Dash of garlic powder (optional)

Dash of pepper

1 package gluten-free pasta

 

Optional:

Sprinkle dairy-free parmesan on top 

Optional: Top with Lemon & Dill Chicken or steamed broccoli or Grilled Vegetables. Green beans also make a great side dish. 

 

 

1) Warm coconut milk on medium heat, whisk in rice flour continue whisking for 2 minutes. 

​

2) Add in the vegan butter, nutritional yeast, garlic powder and dairy-free grated cheese. Once the cheese has melted, turn off the heat and let stand for 5 minutes to thicken up.

​

3) Meanwhile, in a medium-sized pot bring water to a boil for pasta. Add pasta to water with a drop of olive oil and boil for 7 minutes. 

​

4) Once the sauce and noodles are ready, mix them together, sprinkle pepper and dairy-free parmesan on top and serve warm.

​

Ready in 15 minutes!

Tips:

Make the chicken ahead of time and freeze it in individual containers or baggies.

 

If you can buy a large package of chicken, enough for a week or two. Then bake the plain chicken in the oven. Once it is cool, freeze it.
