Chocolate Chip Muffins
These tasty muffins have a yummy chewy texture everyone will talk about!
~ Gluten & Dairy Free ~
Makes 12 large muffins

Ingredients:
​1 cup white rice flour
3/4 cup Kinnikinnick pancake and waffle mix
1 1/4 cup white sugar
1/2 tsp xanthan gum
1/4 cup olive oil
1/4 cup vegetable oil
1 tsp gluten-free vanilla
1 cup unsweetened apple sauce
3/4 cup Enjoy Life Semi-Sweet Mini Chips

1. Pre-heat oven to 350 degrees.
​
2. Mix all dry ingredients in a stand blender or large bowl, blend. In a medium bowl whisk wet ingredients then add to dry ingredients. Blend until well mixed.
3. Using a lined or greased muffin pan divide batter into 12 muffin cups.
​
4. Bake at 350-degrees for 30 minutes.
