Chicken Salad Wrap
This is a deliciously filling lunch!
Chicken, sauteed mushrooms, cheese and avocado melted together!
~ Gluten & Dairy Free ~
2 Servings
Ingredients:
2 gluten-free wraps
1 grilled chicken breast
2 dairy-free cheese slices
1-2 tbsp veganaise or mayo
4 mushrooms sliced and sautéed
1 avocado, sliced

1) Cook chicken and cut into pieces.
2) Mix chicken (cold or warm) with veganaise/mayo.
3) Sauté mushrooms in a small frying pan or on a panini grill.
4) Place a cheese slice on a gluten-free wrap. Put chicken salad, mushrooms and avocado in the wrap.
5) Grill on a panini grill or lightly sprayed frying pan.

Tip: Panini grills are the best when using gluten-free wraps! If you don't have a panini grill just lightly oil a frying pan and cook on medium heat. Brown both sides of the wrap, for a couple of minutes. Make sure the cheese is softening.
