Broccoli & Cheese Soup
This creamy soup is dairy free and so delicious!

30 minute meal
Ingredients:
1 tbsp vegan butter
1 onion, chopped small
2 cups of chicken or vegetable broth
2 cups of coconut milk*
2 cups broccoli florets, chopped
2 cups of grated cheddar dairy-free cheese*
2 tbsp nutritional yeast
Dash of pepper

1) In a small frying pan over medium-low heat, sauté chopped onion in 1 tbsp of vegan butter. Cook for about 5 minutes and remove from heat.

2) In a medium sized pot bring the coconut milk and broth to a boil. Add the broccoli, and let simmer for 15-20 minutes.
3) Add sautéed onions.
4) Stir in the grated dairy-free cheese, nutritional yeast and pepper. Continue to simmer until cheese has melted for about 10 minutes.

Tip:
* I prefer to use Lite Canned Coconut Milk or unsweetened refrigerated coconut milk.
*Violife Cheddar Style Shredded is an excellent dairy-free cheese to put in this soup.
